Ingredients
335F, 9" round
1) 270g granulated sugar
1) 5 tbsp. (65g) canola oil
1) 3 tbsp. (42g) unsalted butter, room temp
2) 4 tsp. (16g) vanilla extract
3) 2 large eggs
3) 2 egg yolks
4) 2½ cup (350g) all-purpose flour
4) 1 tbsp. (14g) baking powder
4) 1 tsp. (6g) salt
5) 19g vinegar
5) 301g whole milk
Frosting:
6) 2 egg whites
6) ¼ cup (56g) water
6) ¾ cup (139g) granulated sugar
6) ¼ tsp. cream of tartar
7) 1 cup (100g) flake sweetened coconut, toasted on pan

In a bowl prepare (5) and set aside until it reaches room temp.

In a bowl combine (4) and set aside.

In a mixing bowl cream (1) until white and fluffy. Add (2) and eggs (3) one at a time giving it 1 minute to mix in between.

Fold in (4) and (5) alternating.

Batter weight 1199g. Pour into 9" pan lined with parchment.

Bake at 335F for 50 minutes.

Frosting: In a sauce pan over medium heat combine (6) and beat until mixture reaches 160F. Weight of frosting 219g ÷ 3 = 73g.
