Ingredients
makes 8 x 250mL
1) 2 lbs. (908g) strawberry, hulled and havled (2 pints)
1) 1101g rhubarb, cut into ½" cubes
1) 4 ½ cup (836g) sugar
1) 3 tbsp. lemon juice

In a large pot combine (1) and cook for 1.5 hours on medium heat, stirring occasionally (mixture is above 205F)

Ingredients
370g rhubarb, cut into ½" cubes
1 lb. strawberry, hulled and havled
1/3 cup (61g) sugar
1/3 cup (53g) demerara brown sugar
¼ cup (28g) cornstarch
¼ tsp. (2g) salt
2 tbsp. lemon juice
1 tbsp. (14g) unsalted butter

In a sauce pan combine all ingredients and heat on low until rhubarb is soft (~20min).

302g filling

Ingredients
350F, 9x13 pan with parchment paper
1) 3 cup (435g) all-purpose flour
1) ¾ tsp. salt
1) 1½ tsp. baking powder
2) 1¾ cup (324g) granulated sugar
2) 1 cup (226g) unsalted butter
3) 3 large eggs
3) 1 tsp. vanilla extract
4) 614g strawberry rhubarb filling

Combine (1) set aside.

In a mixing bowl cream (2) then add (3) mix throughly then gradually add (1) in 3 portions.

Save 25% of the dough and spread the rest onto the pan, then top off with (4) then roll and cut into shapes of the dough and place on top.

Bake at 350F for 35 minutes.

If the top isn't brown enough, just brown it carefully under broil.

Adaped this recipe below and used for 10" deep dish pie plate.

1) 1½ cup (217g) all-purpose flour
1) ¼ tsp. salt
1) ¾ tsp. baking powder
2) ¾+⅛ cup (162g) granulated sugar
2) ½ cup (113g) unsalted butter
3) 1 large egg
3) 1 tsp. vanilla extract
4) 307g strawberry pie filling

Combine (1) set aside.

In a mixing bowl cream (2) then add (3) mix throughly then gradually add (1) in 3 portions.

Save 25% of the dough and spread the rest onto the pan, then top off with (4) then roll and cut into shapes of the dough and place on top.

Bake at 350F for 35 minutes.
