Ingredients
Pan fry, makes 4
1) 225g all-purpose flour
1) 1 ½ tsp. (3g) salt
1) 25 15g sugar
2) 50g boiling water
3) 50g milk, 140F/60C
3) 55g water, 140F/60C
4) ghee, melted for shaping and brushing

In a sauce pan heat (3) to 140F/60C

In a mixing bowl, combine (1) then add in (2), mix roughly then add (3). Knead for 9 minutes.

Wrap dough 388g in saran warap and let it rest for 1 hour.

Divide dough into 4 (97g).

Roll flat and pull on the dough to make it even thinner. brush ghee and fold into thirds left and right, brush more ghee then fold into thirds top to bottom.

Allow dough to rest for 30min or more. roll it flat then pan fry at #4 setting for 2min each side covered.
