Ingredients

1) Brown the pork ribs

2 racks of pork side ribs

wok
some cooking oil
1 piece star anise
1 piece cinnamon bark
1 thumb size ginger, minced
4 cloves garlic, minced
6 pieces of hot pepper
stir 1 min, until fragrant
1 cup chinese cooking wine
2 tbsp. (22g) brown sugar
1 tbsp. (20g) hoisin sauce
1 tbsp. (20g) oyster sauce
2 tbsp. (32g) soy sauce
2 tbsp. (32g) dark soy sauce
2 tbsp. (32g) rice vinegar
bring to a boil
transfer to pressure cooker
add the browned ribs
Enough water to cover the ribs
Pressure cook for 40 minutes on High.
Remove the oil layer
Remove the ribs
Strain the liquid, and boil it down till thickened
