Ingredients
350F, 12 muffin
1) 2 cup (240g) all-purpose flour
1) 1 tbsp. (14g) baking powder
1) 2 tsp. cinnamon
1) ¼ tsp. nutmeg
1) ¼ tsp. ground ginger
1) ½ tsp. (3g) salt
2) 1 1/3 cup (300g) whole milk
2) 3 tbsp. (33g) brown sugar
2) ¼ cup (76g) blackstrap molasses
3) ¼ cup (57g) unsalted butter, melted
3) 1/3 cup (83g) peanut butter
4) 1 ¼ cup (200g) Semi-sweet Choc. chips
5) 2 tbsp. sweetened coconut flakes

In a bowl sift (1)and set aside.

In a mixing bowl combine (2), and (3) then add in (1). Fold in (4).

Weight of batter 1004÷12= 84g, divide batter into the muffin cups and sprinkle (5) on top.

Bake at 350F for 18 minutes.

Cool in pan.
