Ingredients
375F, yield 2 loaves or 4 mini loaves
1) 4 tsp. active dry yeast
1) ½ cup warm water (110F)
1) 1 tbsp. sugar
2) 1 cup warm water (110F)
2) ½ cup molasses (153g)
2) 1 tbsp. salt
2) 2 tbsp. oil
3) 2 cup rye flour
4) 2 ¼ cup bread flour
5) 1 tsp. cornmeal, (for sprinkling)

Combine (1) set aside for 10min.

In a mixing bowl combine (2), add rye flour (3) and (1), mix until smooth.

Add bread flour (4) in cup portions, allow dough to pull from the sides of the bowl. May need to add additional 2 tbsp bread flour until dough is smooth and no longer too sticky. It should be very pilable and elastic.

Transfer into greased bowl covered saran wrap on top allow it to rise for 1.5 hours. (Use oven set at 170F, turn off, then put bowl in)

Punch dough down and divide into 4 pieces. Flatten and roll into logs and sprinkle with cornmeal. Cover with saran wrap and allow dough to rise until double in size about 1 hour.

Use triple sheet pan so the bottom of the bun does not burn.

>4 loaves bake at 375F for 15 minutes.

>>2 loaves bake at 375F for 30minutes.

First rise (1½ hrs.)

Second rise (1 hr.)
