1 tbsp. oil
small piece fresh ginger
1 small onion, chopped
1 tomato, chopped
2 cup water
1 lb (454g) mussels
2 tsp. fish sauce

Heat oil, add ginger until fragrant, then stir in onion and cook until onion is translucent.

Add tomato stir, then add the mussels, pour water and fish sauce. Allow to boil for 10minutes.
