Ingredients
350F, two 9" round cake parchment bottom
1) 5oz, 145g semi-sweet chocolate
2) 141g unsalted butter, microwave 30sec
2) 110g canola oil
2) 404g granulated sugar
3) 5 large eggs, room temp
4) 10g vanilla extract
5) 468g all-purpose flour
5) 19g baking powder
5) 1 tsp. (6g) salt
6) 369g buttermilk
(21g vinegar) substitute
(348g whole milk) substitute

Combine (6) and set aside for 10min.

In a sauce pan melt chocolate (1) and set aside.

In a bowl combine (5)and set aside.

In a mixing bowl combine (2) cream until fluffy 5min, then add in eggs (3) one at a time then the vanilla (4).

Fold in (5) in three portions alternating with (6).

Divide batter into two and mix chocolate into one.

Drop spoon full of vanilla and chocolate batter onto two pan.

Bake at 350F for 35 minutes.

350F, 8x5" loaf pan
1) 1 cup (140g) all-purpose flour
1) ½ tbsp. (7g) baking powder
1) ½ tsp. (3g) baking soda
1) ¼ tsp. (2g) salt
2) ¾ cup (171g) unsalted butter, room temp
2) ¾ cup (139g) granulated sugar
3) 2 large eggs
4) 1 tsp. (4g) vanilla extract
5) 1 cup (236g) buttermilk
(14g vinegar) substitute
(222g whole milk) substitute
6) ¼ cup (18g) dutch-processed cocoa powder
7) 1/3 cup (53g) mini chocolate chips
8) ½ cup (70g) all-purpose flour

In a bowl combine (1) set aside.

In a mixing bowl cream (2) then add eggs (3) one at a time then add (4).

Alternate the addition of (1) and (5).

Tranfer half of the batter into a bowl then stir in (6) mix then add (7).

In the mixing bowl add in (8).

Bake at 350F for 40 minutes.

325F, 9x5x3 inch loaf pan lined with parchment paper
1) 299g all-purpose flour
1) 27g cornstarch
1) 1 cup (185g) granulated sugar
1) 1 tsp. (4g) baking powder
1) ¾ tsp. (4g) baking soda
1) ¾ tsp. (5g) salt
2) ¾ cup (170g) unsalted butter
3) 2 large eggs
4) 2/3 cup (153g) sour cream
5) ½ cup (117g) milk
5) 2 tsp. (8g) vanilla extract
6) 1/3 cup (25g) natural unsweetened cocoa powder
6) 1/3 cup (75g) hot water

In a mixing bowl combine (1) then add butter (2), stir until it looks like damp sand.

Add eggs (3) one at a time then stir in (4) followed by (5).

Divide batter into two. Mix one with (6)

Loaf: Bake at 325F for 1 hour.

2 x 9" cake pan bake at 325F 30-40 minutes.

1) 1 ½ tsp. (6g) baking powder
1) ½ tsp. (3g) salt
2) ½ cup (88g) canola oil
2) 4 large eggs
2) 1 tsp. (4g) vanilla extract
3)½ cup (117g) whole milk
4) 3 tbsp. (18g) dutch-processed cocoa powder
4) 1 tbsp. (16g) whole milk

Bake at 350F for 1 hour.
