Ingredients
350F, 9" pie
Crust:
1) 1 ½ cup (189g) graham cracker crumb
1) 27g sugar
1) 63g unsalted butter, melted
Filling:
2) 1 cup (235g) lime juice (6)
2) 2 (300mL) cans sweetened condensed milk
3) 4 egg yolks
Topping:
whipping cream

6 limes, 1 lb. yields 310g juice (use a juicer)

Crust:

In a 9" pie plate combine (1) and firmly press it down and up the sides. Blind bake at 350F for 10 minutes.

Filling:

In mixing bowl combine (2) then add in (3).

Pour mixture into cooled pie crust.

Bake at 350F for 22 minutes.

Let it cool for 2 hours and then refrigerate for at least 6 hours or overnight.

I zest the limes and sprinkle some sugar, wrap in saran wrap and freeze it for other use.
