1) 2¼ cup (317g) all-purpose flour
1) 2 tsp. (10g) baking soda
1) ½ tsp. ground cinnamon
1) ½ tsp. ground ginger
1) ¼ tsp. cloves
1) ¼ tsp. allspice
1) ¼ tsp. nutmeg
2) ¾ cup (171g) unsalted butter, room temp
2) 1 cup (185g) granulated sugar
3) ¼ cup (76g) molasses
4) 1 large egg
5) ¼ cup granulated sugar, for rolling

In a bowl combine (1) and set aside.

In a mixing bowl, cream (2) then add (3), mix then add (4) mix thoroughly then stir in (1).

Weight of batter 815g. Weigh 20g each into balls and roll in sugar.

Bake at 350F for 11 minutes.
