Ingredients

1) ¼ cup (61g) cold water
2) 1 envelope knox gelatine
3) ½ cup (149g) white corn syrup
3) 1 tbsp. (20g) glycerine
4) 2 tbsp. (30g) shortening
5) 1 tsp. (4g) clear vanilla extract
6) 4 cups (480g) icing sugar
7) 4 cups (480g) icing sugar

Into a bowl measure (1) then sprinkle (2) and set aside for 10min.

In a bowl combine (3) and set aside.

Heat the gelatine on a double boiler until it is dissolved then add (3) heat for a minute then add (4) heat until shortening is almost completely melted, remove from heat and add in (5). Let mixture cool to 40C.

In a mixing bowl add (6) and make a well in the center and add in the gelatine mixture mix it using spatula, then gradually add (7). Might be best to work on the mat then use dough hook to finish it off.

Weight of fondant 1208g, 2.66lbs.
