350F, makes 24 rolls
1) 1/3 cup (61g) sugar
1) ½ cup (134g) whole milk
1) ½ cup (107g) hot water
2) 2¼ tsp. dry active yeast
3) 1 large egg, beaten
4) 3 cup (408g) all-purpose flour
4) ¾ tsp. salt
5) ¼ cup (57g) unsalted butter, room temp
6) 43g all-purpose flour
7) old cheddar cheese, optional

In a bowl combine (1), microware accordingly to reach 115F temperature. Add yeast (2) stir to dissolve and let it sit for 10 minutes. Then add in (3)

In a mixing bowl combine (4), then add in milk yeast mixture use paddle attachement and stir. Add butter (5) in portion allow dough to pull from the sides of the bowl. Replace with dough hook and add additional flour (6) if needed. Knead dough for 8 minutes.

Transfer dough into oiled bowl and cover with saran wrap and let it rise for an hour or until double it's size.

Punch dough down and divide (A) into two and make two circles and cut each into 12 pie slices or (B) divide into 24 by weight and shape accordingly to preference.

Place on baking tray and cover with saran wrap and let it rise again for 30 minutes.

Bake at 350F for 15 minutes.
