1 tbsp. (16g) shaoxing wine
stir 20 Sec
add beef back
2) ½ ¼ tsp. (2g) salt
2) ½ tsp. (3g) sugar
2) 1 tbsp. (18g) soy sauce
2) 1 tsp. (6g) dark soy sauce
2) pinch of white pepper
stir 1-2 min
¼ cup chicken stock

Prepare (1) and set aside for 30min.
