1) Chicken Filling

1-2 tbsp. cooking oil
medium onion
saute until translucent
500g chicken boneless cubed
stir till cooked
¼ tsp. ginger powder
1 tsp. garlic powder
½ tsp. salt
1 tsp. black pepper
1 tsp. red chili powder
½ tsp. mustard powder
1 tbsp. (15g) soy sauce
3 tbsp. (60g) ketchup
cover and cook at low heat for 5-6min
medium heat until moisture is reduced
let it cool down
use food processor to chop the chicken
1 cup shredded chicken
stir together

I used red chili powder(mild) from an indian store, and it only has chili as ingredient. It is just so-so in taste and spicy.

1) 1 ½ tsp. (8g) granulated sugar
1) ¼ cup (58g) whole milk
1) ¼ cup (56g) water
2) 2 ¼ tsp. (7g) dry active yeast
3) 2 cups (280g) all-purpose flour
3) ½ tsp. (4g) salt
4) 1 large egg
5) 1 tbsp. (13g) canola oil
6) 1 cup (140g) all-purpose flour, additional

The dough recipe is not right as written, it needs way more liquid than stated. It will not seal when you pinch the dough. And I did not bother with the egg wash because i knew the filling will come out.

In a suace pan heat (1) to 115F then add in yeast (2). Stir until dissolved. Set aside for 10 minutes.

In a mixing bowl combine (3) then add in (4)stir then add (1) stir, add more warm water as needed.

Add (5) and knead for 8 minutes.

Transfer dough into oiled bowl and cover with saran wrap and let it rise for 1 hour.

Divide dough into 10.

Bake at 180C/350F for 25 minutes.
