Ingredients
350F, yield 12 muffin
1) 2/3 cup sweetened flaked coconut
1) 2/3 cup semisweet chocolate chips
1) 2/3 cup (2.5oz) chopped walnuts
1) 2/3 cup dried cherries or cranberries
2) 1 2/3 cup (238g) all-purpose flour
2) 1 tsp. baking powder
2) ¾ tsp. coarse salt
3) 9 tbsp. (126g) unsalted butter, room temp
3) 1 cup (160g) brown sugar
4) 2 large eggs
4) 1 tsp. vanilla extract

Combine (1) and set aside.

Combine (2) and set aside.

In a mixing bowl cream (3) then add egg (4) one at a time. Fold in (2) then add 1½ cup of (1).

Line cupcake pan with liners fill each ¾ full and sprinkle coconut mixture (1) on top.

Bake at 350F for 25 minutes.
