1) 1 ½ cup (354g) buttermilk
(21g vinegar) substitute
(333g whole milk) substitute
2) 4 cups (560g) all-purpose flour
2) 2 tbsp. (29g) baking powder
2) 1 tsp. (6g) salt
2) + 2 tbsp. (30g) granulated sugar
3) 1 cup (226g) unsalted butter, frozen
4) 1 egg, for brushing tops

Into a bowl combine (1) and set aside for 10min.

In a bowl combine (2,) grate frozen butter (3) into it, then add the buttermilk (1). Mix it a bit then transfer onto mat and work the flour until it comes together.

Press into 6x9" rectangle and fold (like making croissants). Repeat once more.

Press dough down to ½" height then press down with round cookie cutter.

Weight of dough is 1651g.

Cover with saran and let cut biscuits rest for 30 minutes.

Brush the tops with egg and bake at 375F for 25 minutes.
