Ingredients
350F, yield 18 muffins
1) 2 cup (280g) all-purpose flour
1) 2 ½ tsp. (10g) baking powder
1) ½ tsp. (3g) baking soda
1) ½ tsp. (3g) salt
2) ½ cup (113g) margarine
2) 1 cup (185g) sugar
3) 2 large eggs
4) 1 tsp. (4g) vanilla extract
4) 6 tbsp. (96g) milk
4) 1 ½ cup (371g) banana ~3, mashed

In a bowl combine (1) and set aside.

In mixing bowl combine (2), beat until throughly mixed then add (3) one at a time then add (4). Fold in (1).

Weight of batter 1151g ÷ 18 = 64g.

Bake at 350F for 20 minutes.

Ingredients
350F, 12 cupcakes
1) ¼ cup (57g) unsalted butter
1) ¾ cup (139g) granulated sugar
2) 2 large egg
2) ½ tsp. (2g) vanilla extract
3) 1 ½ cup (369g) mashed, very ripe banana ~2
4) 1 ½ cup (210g) all-purpose flour
4) 1 tsp. (4g) baking powder
4) ½ tsp. (3g) baking soda
4) ¼ tsp. (2g) salt
5) ½ cup (84g) mini chocolate chips (optional)
Bake at 350F for 25 minutes

Combine (4) and set aside.

Beat (1) then add (2)until well blended. Add mashed banana (3), beat on high speed for 30 seconds.

Add (4) in three portions then add chocolate chips (5) to batter;

Pour batter evenly into 12 cupcake pan and bake at 350F for 25 minutes.
