Ingredients
375F, 10" deep pie dish
Bottom
1) 1 cup (140g) all-purpose flour
1) 2 tbsp. (27g) granulated sugar
1) ¼ tsp. salt
1) ½ cup (113g) unsalted butter, cold
2) 1 tbsp. white vinegar
Middle
3) 115g brown sugar
3) 1 tsp. ground cinnamon
3) 2 tbsp. (22g) all-purpose flour
4) 819 g apples, sliced into wedges
Top
5) ¾ cup (111g) all-purpose flour
5) ¼ cup (46g) granulated sugar
5) ½ cup (113g) unsalted butter, cold

Process (1) in food processor until sandy texture then add in (2) then just pulse to combine.

Press mixture onto pie plate.

In large bowl combine (3) and add in the apples and toss to coat with dry mixture. Transfer onto the pie

In food processor combine (5) and sprinkle this topping on the apples.

Bake at 375F for 1 hour.

2) 2 tbsp. white vinegar
Middle (make 2 separately)
3) 1 cup (162g) golden yellow sugar
3) 115g for 10" or 121g for 9x13 brown sugar
3) 1 tsp. ground cinnamon
3) 2 tbsp. (22g) all-purpose flour
819g for 10" apples, sliced into wedges
1145g for 9x13 apples, sliced into wedges
Top
5) 1 ½ cup (222g) all-purpose flour
5) ½ cup (92g) granulated sugar
5) 1 cup (226g) unsalted butter, cold

Process (1) in food processor until sandy texture then add in (2) then just pulse to combine.

Divide mixture into two and press mixture onto pie plate.

In large bowl combine (3) and add in the apples and toss to coat with dry mixture. Transfer onto the pie

In food processor combine (5) and divide into two. Sprinkle this topping on the apples.

Bake both pies together at 375F for 1 hour.
